Mexican Frittata

For breakfast I'm always in a hurry. Usually I drink shakeology...BUT when I have a little extra time I love making eggs, but I'm always looking for NEW ways of making them. We tried this the other day and it was AMAZING!!

Sauté 1/2 bell pepper and 1/4 c onion. I threw in some spinach too.

Mix Dash of cumin and salt and pepper with 3 eggs and 1 cup egg whites.

After you cook the veggies pour in eggs. Don't stir. Let them set. Then put in oven for 5 minutes.

Need to use an oven proof skillet 🍳I love my cast iron one. Bake at 350. Top with salsa!
