I LOVE chicken salad, but I don't love the calories and fat that tend to come with it, so when I found this recipe in the Beachbody FIXATE cook book I was SUPER excited! It's one of the best chicken salads I've EVER had!
Excited to share this with you! And FYI if you don't have the FIXATE cook book...it's only 15.99 and SO worth it! I cook almost all our family meals from it.
CREAMY CHICKEN SALAD
Ingredients:
3 cups Chopped rotisserie chicken breasts
1/2 cup chopped green apple
1/2 cup seedless grapes cut in half
1/3 cup sliced raw almonds
2 green onions sliced
2 tbsp tarragon
1/4 cup honey mustard dressing (see recipe below)
8 cups romaine shredded
Combine ingredients in a large bowl. Mix and serve on 2 cups romaine. 1 serving is 1 and 1/14 cup of the chicken salad.
21 DF PORTIONS: 1 green, 1/2 purple, 1red, 1/2 blue, 1/2 orange
HONEY MUSTARD DRESSING
1/2 cup reduced fat plain green yogurt
3 tbsp dijon mustard
3 tbsp raw honey
3 tbsp rice vinegar
1/4 cup extra virgin olive oil
sea salt to taste
Combine all except oil in a bowl. Slowly whisk in oil. Refrigerate.
