This has been a favorite in our house for Friday nights for YEARS, but just recently it got even cleaner when I finally found a good recipe for homemade BBQ sauce. I was always bothered by the fact that bottled bbq sauce ALWAYS has high fructose corn syrup....at least the ones I have found! If you know of one that doesn't and is sold in grocery stories, please send me the info!
Here's the ingredients and recipe for the pizza and BBQ sauce! ENJOY!
-Make your own whole wheat pizza crust or what I like to do to save time is find a whole wheat dough at my local grocery store...all I have to do is roll it out
-Cilantro chopped (you decide how much)
-1/2 a purple onion chopped
-Smoked gouda shredded about 1/2 lb should be plenty
-2 chicken breasts chopped into small pieces
-Homemade bbq sauce (recipe below)
BBQ SAUCE INGREDIENTS AND DIRECTIONS:
1/2 cup tomato paste - no sugar, or if you can't find that use one with no salt 2 tbsp apple cider vinegar 1/4 cup worsteshire sauce 1/2 cup water 1/4 tsp sea salt or pink salt 1/8 tsp pepper or a few twists fresh black pepper 2 tbsp maple syrup 1/4 tsp garlic powder 1/4 tsp onion powder Combine all ingredients into a jar and shake well. It will be very thin. If you want to thicken it up, put it in a small sauce pan and simmer for about 20 minutes to reduce water. You could also just add 1/4 cup of water to speed this up.
PIZZA DIRECTIONS:
Roll out dough.
Cook chicken on stove top in a little bit of olive oil. When it's almost completely cooked through add about 1/4 cup of the bbq sauce for flavoring
Spread the BBQ sauce on the pizza
Top dough with all pizza ingredients. Cheese goes last of course!
Bake in Oven according to crust directions and enjoy!!
